You all know by now that I cook a lot, both at home & at work (I manage a food business in Perth, Australia). My world is basically made of fruits, veggies, nuts and seeds, cooking and dishes. What you probably don’t know is that even in my spare time I choose to read about …. well….still food! 

I browse the internet searching for ingredients I never heard of, cooking methods I haven’t used before, fun food facts, and drool-worthy food photos. And I’ve found this one, an amazing start for Monday, just when I search the internet at night. This is… pineapple beet juice!

Ingredients

  • ½ pineapple (fresh)
  • 1 small beet
  • ½ cucumber
  • ¾” knob of ginger

Steps

  1. Remove the skin and core from the pineapple. Cut into large chunks.
  2. Put the chopped pineapple, beet, cucumber, and ginger through a juicer. Stir and enjoy.

Notes

  • Organic produce is highly recommended, if possible; otherwise, make sure to peel the produce before juicing.
  • If you don’t have a juicer, you could try blending the mixture through a high-speed blender (add water as necessary). Then, pour the mixture through a nut milk bag to strain the pulp. Beet juice stains though, so avoid this method if you’re a stickler for perfectly white nut milk bags!
