Instructions

  1. Cook the Grits: Bring 4 cups of water to a boil in a medium saucepan. Add the salt and slowly whisk in the grits. Reduce the heat to low and cook, stirring occasionally, until thick and creamy, about 20 minutes. Stir in the shredded cheese until melted and smooth.
  2. Prepare the Shrimp: In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the skillet. Add the shrimp to the skillet and cook until pink and opaque, about 2 minutes per side. Remove the shrimp and set aside.
  3. Sauté the Vegetables: In the same skillet, add the chopped onion and bell pepper. Sauté until softened, about 5 minutes. Add the minced garlic, paprika, and Cajun seasoning, cooking for another minute until fragrant.
  4. Combine Everything: Pour in the chicken broth and lemon juice, stirring to combine. Return the shrimp and bacon to the skillet, cooking until heated through, about 2 minutes. Sprinkle with chopped parsley.
