If you haven't heard of Marry Me Chicken Pasta, now is the moment to open your heart. Readers love it, so I had to make the skillet version into an amazing pasta! This meal has a similar basic creamy garlic, parmesan, and tomato sauce with a great blend of herbs.
Using rotisserie or leftover chicken is one of my favorite shortcuts, and it works particularly well in this Marry Me Chicken Pasta. The creamy sauce's taste combination is said to help you find a partner. It'll be love at first taste with this 30-minute spaghetti that's incredibly simple to prepare.
Since I released my popular Tuscan-style creamy recipe, I knew these flavors would also work well as a one-pot pasta dish. The combination of chicken, cream, sun-dried tomatoes, and parmesan is lovely; it feels like a nice dinner but is still quick and easy to cook midweek!

Ingredients
Chicken Pasta
- 1 1/2 pounds boneless skinless chicken, cut into 1-inch pieces.
- 10 ounces penne pasta.
- 1/2 teaspoon salt.
- 1/4 teaspoon pepper.
- 1 tablespoon of olive oil.
Sauce
- 3 tablespoons butter.
- 2 teaspoons of garlic, minced.
- 3 tablespoons flour.
- 2 cups chicken broth.
- 1 cup heavy cream.
- 1 cup parmesan cheese grated.
- 1 cup sun-dried tomatoes, drained.
- 1 teaspoon paprika.
- 2 teaspoons dried Italian seasoning.
- fresh basil for garnish.
Steps
Chicken Pasta
- Cook the pasta following the package instructions. Drain the pasta and set it aside while you make the chicken and sauce.
- Cut the chicken into 1-inch bite-sized pieces and season with salt and pepper.
- In a large pan, heat the olive oil over medium-high heat. Add the chicken and simmer for 6-8 minutes, or until no longer pink and fully done.
- Place the cooked chicken on a platter and put aside while you prepare the sauce.
- Sauce
- Return to the same skillet and add the butter. Once melted, sauté the garlic for 30 seconds until aromatic. Add the flour and whisk to form a paste.
- Whisk in the chicken stock, heavy cream, and Parmesan cheese.
- Combine the drained sun-dried tomatoes, paprika, and Italian spice. If needed, season with additional salt and pepper.
- Simmer the sauce for a few minutes until it thickens.
- Return the chicken to the skillet, along with the cooked pasta. Stir to evenly cover the chicken and noodles with the sauce.
- Garnish with chopped basil leaves and more Parmesan cheese.
Notes
- To make this dish truly stand out, use a white wine that you love drinking. I never promote cooking wine. It's lesser quality than the one you drink and may be quite salty, making it unsuitable for consumption on its own, so I avoid cooking with it as well.
- I don't advocate replacing the heavy cream with anything with a lower fat level since the tomato in the sauce may curdle it, requiring you to add extra flour to thicken it.

Reheat gently in the microwave or on the stovetop over medium-low heat, and you're good to go! If you need more moisture, add a dash of cream.
