Ingredients
Scale
- 1 cup fregola
- 2 cups clams (cleaned)
- 2 tablespoons olive oil
- 3 garlic cloves (minced)
- 1 cup cherry tomatoes (halved)
- ½ cup white wine
- Fresh parsley (chopped, for garnish)
- Salt and pepper to taste
Instructions
- Cook the fregola: In a large pot of salted boiling water, cook the fregola according to package instructions until al dente. Drain and set aside.
- Sauté the garlic: In the same pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the clams: Stir in the cleaned clams and cherry tomatoes, then pour in the white wine. Cover the pot and let steam until the clams open, about 5-7 minutes.
- Combine everything: Once the clams have opened, add the cooked Sardinian fregola to the pot. Toss everything together, seasoning with salt and pepper.
5. Garnish and serve: Remove from heat, garnish with fresh parsley, and serve immediately!
Notes
- Ensure that all clams are closed before cooking; discard any that remain closed after steaming.
- You can substitute fregola with couscous for a quicker option, but the texture will differ.
