Sardinian Fregola with Clams: Where Every Bite Tells a Sea Story

Cooking can be a journey, and my love for the ocean is often reflected in my dishes. Today, I’m excited to share my take on Sardinian Fregola with Clams, a dish that transports you straight to the sunny shores of Sardinia. Pairing it with clams creates a symphony of taste that feels both comforting and celebratory.

Clams, rich in omega-3 fatty acids, not only add a briny depth but also offer numerous health benefits. Plus, Sardinian fregola is a fantastic alternative to traditional pasta, bringing in whole grains and fiber. As I stir the pot, I’m reminded of sun-soaked afternoons spent by the sea, savoring every bite.

Whether you're hosting a dinner party or just looking for a quick weeknight meal, this recipe is a winner. It’s easy to make and packed with flavor, perfect for impressing friends or enjoying a cozy night in. So, let’s dive into the delightful world of fregola!

  5. Garnish and serve: Remove from heat, garnish with fresh parsley, and serve immediately!

Steps

Where to buy fregola?

Until recently, fregola wasn’t easily available outside of Italy. But, it’s becoming popular and you can find it either online or in some Italian specialty shops.

  • Specialty Italian Grocery Stores: Check local Italian markets or specialty food stores that carry imported goods.
  • Online Retailers: Websites like Amazon, Eataly, and Italian Food Online Store offer a variety of fregola options.
  • Whole Foods Market: Many Whole Foods locations carry fregola in their pasta or international foods section.
  • Local Supermarkets: Some larger supermarkets with extensive pasta selections might have fregola in their international foods aisle.

Notes:

  • Ensure that all clams are closed before cooking; discard any that remain closed after steaming.
  • You can substitute fregola with couscous for a quicker option, but the texture will differ.

How To Store Sardinian Fregola with Clams:

  • Cool Down: Allow the dish to cool to room temperature after cooking. This helps prevent condensation in the storage container.
  • Use an Airtight Container: Transfer the fregola and clams to an airtight container. If possible, separate the fregola from the clams to maintain texture.
  • Refrigeration: Store in the refrigerator for up to 2-3 days. The flavors will continue to meld, making it even more delicious.
  • Freezing: For longer storage, you can freeze the fregola (without clams) in a freezer-safe container for up to 2 months. Clams can lose their texture when frozen, so it's best to add them fresh when reheating.
  • Reheating: When ready to eat, reheat the dish on the stove over low heat, adding a splash of water or broth to prevent drying out. If frozen, thaw in the refrigerator overnight before reheating.
