- 1 cup of cooked crab meat, shredded
- 1 cup of heavy cream
- 4 large egg yolks
- 1 lemon (zested)
- A pinch of nutmeg (freshly grated)
- Chopped parsley (for garnish)
- 1 teaspoon of salt
- ½ cup of additional cream/milk mixture
- ¼ cup of granulated sugar for caramelizing
Instructions
- Preheat the oven to 325°F (160°C).
- Heat cream, additional milk, salt, and nutmeg in a saucepan until steaming.
- Whisk egg yolks and sugar until smooth, then temper with the cream mixture.
- Fold in crab meat and lemon zest. Pour into ramekins.
- Bake in a water bath for 25-30 minutes, until edges are set.
- Chill for at least 1 hour.
- Caramelize sugar on top with a torch or broiler.
- Garnish with parsley and serve.
