Ingredients

  • 1 cup of cooked crab meat, shredded
  • 1 cup of heavy cream
  • 4 large egg yolks
  • 1 lemon (zested)
  • A pinch of nutmeg (freshly grated)

  • ½ cup of additional cream/milk mixture
  • ¼ cup of granulated sugar for caramelizing

Instructions

  3. Whisk egg yolks and sugar until smooth, then temper with the cream mixture.

  5. Bake in a water bath for 25-30 minutes, until edges are set.
  6. Chill for at least 1 hour.
