Ingredients

  • 4 corbina fillets
  • 1 can of chickpeas, drained and rinsed
  • 1 tablespoon harissa
  • 1 small lemon (zested and juiced)
  • 1 tablespoon oil
  • 2 tablespoons butter
  • 2 tablespoons flour
  • ½ cup cream
  • 1 cup stock
  • 2 shallots, thinly sliced
  • 3 garlic cloves, minced
  • 1 cup spinach (cooked and drained)
  • Pickled giardiniera, crispy shallots, and 1 teaspoon vinegar for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse and dry the corbina. Drizzle with olive oil.
  3. Season with salt and pepper; add garlic inside the cavity.
  4. Stuff with lemon slices and place on a baking sheet.
  5. Bake for 20-25 minutes until flaky. If using, add corbina eggs to the baking sheet.
  6. Garnish with parsley before serving.
