- 4 corbina fillets
- 1 can of chickpeas, drained and rinsed
- 1 tablespoon harissa
- 1 small lemon (zested and juiced)
- 1 tablespoon oil
- 2 tablespoons butter
- 2 tablespoons flour
- ½ cup cream
- 1 cup stock
- 2 shallots, thinly sliced
- 3 garlic cloves, minced
- 1 cup spinach (cooked and drained)
- Pickled giardiniera, crispy shallots, and 1 teaspoon vinegar for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse and dry the corbina. Drizzle with olive oil.
- Season with salt and pepper; add garlic inside the cavity.
- Stuff with lemon slices and place on a baking sheet.
- Bake for 20-25 minutes until flaky. If using, add corbina eggs to the baking sheet.
- Garnish with parsley before serving.
