- 3–4 lbs beef chuck roast
- 4 cloves garlic, minced
- 1 large onion, chopped
- 1 tsp ground cumin

- 1 tsp oregano
- 1/2 tsp black pepper
- 1/2 cup orange juice

- 2 cups beef broth
- 2 tbsp olive oil

- Combine and Simmer: Return the roast to the pot. Add orange juice, vinegar, and beef broth. Bring to a simmer, cover, and cook on low heat for 3-4 hours, or until the meat is tender.
- Serve: Let the roast rest before slicing. Serve with rice, black beans, or a fresh salad.
