Trader Joe's Corn Ribs, also known as corn riblets, are ears of corn split lengthwise into quarters or smaller. The kernels are then seasoned with a variety of spices and butter before being cooked in the oven, on the stovetop, on the grill, or in an air fryer until soft and juicy.
They make an excellent side dish on any night of the week. Make a large quantity and you'll have the perfect side dish to bring to a potluck or share with guests at a summer steak.
They're not only delicious but also enjoyable to consume. My kids enjoy eating corn this way, and I offer a lot of it throughout the summer. Like normal ribs (the meaty variety), you eat them with your hands, get a bit dirty, and will undoubtedly return for seconds and thirds!

Ingredients
- 4 pieces of corn on the cob
- 1 stick unsalted butter
- 1 TB kosher salt
- 1 TB seasoning of your choice optional
Steps
- Preheat the oven to 400 degrees Fahrenheit, and line a baking sheet with aluminum foil. Then, chop the corn into ribs.
- Next, massage the corn ribs with butter and season with salt or your preferred spice blend.
- Once completely seasoned, place them on the prepared baking sheet and bake for 20-25 minutes, or until curled up and browned somewhat.
Notes
- Simply season them as if you were cooking them in the oven, then throw them in your air fryer at 400 degrees for 10-12 minutes, flipping once after about 5 minutes.
- Add whatever flavor mixes you like to the corn ribs before cooking; the choices are unlimited.
