Campfire magic meets Smores cookies with Tales Of A Kitchens: marshmallow, melty chocolate, crisp graham crumbs. No bonfire needed for this nostalgic treat!

- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) brown sugar
- 1/4 cup (50g) white sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups (160g) all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 cup mini marshmallows
- 1/2 cup graham crackers, crushed into small pieces
Instructions
- Preheat and Prep: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the Butter and Sugar: In a large bowl, cream together the softened butter, brown sugar, and white sugar until light and fluffy.
- Add the Wet Ingredients: Mix in the egg and vanilla extract until well combined.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
- Fold in the Goodies: Gently fold in the chocolate chips, mini marshmallows, and graham cracker pieces until evenly distributed.
- Scoop and Bake: Scoop tablespoon-sized portions of the cookie dough onto the prepared baking sheet, leaving space between each. Bake for 10-12 minutes or until the edges are golden brown but the centers are still soft.
- Cool and Enjoy: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack. Enjoy while still warm for that classic s’mores gooeyness!
Notes
- For an extra gooey center, add a few more marshmallows on top of each cookie before baking.
- Store leftovers in an airtight container for up to 3 days (if they last that long!).
