For all of us chocolate lovers out there.
What’s not to love about a bit & fat chocolate log with nuts and dry fruits? Well, the butter, eggs, animal milk, and refined sugar it contains. Yes, I agree, chocolate salami Italian is one of the tastiest and most simple chocolate desserts one could make, but the ingredients it traditionally contains are not what I like in our sweets.
Mind you, I do have some animal milk a few times a year, I do like some butter every now and then with my breakfast or to cook with, and for sure I have eggs for breakfast every couple of weeks or so.
Needn’t say more. I’ve tried and (in our opinion, with a few substitutions here and there) I’ve successfully revamped the ol’ chocolate salami, bringing it to a whole new healthiness level, without messing with its deliciousness.

- 1/2 cup almond meal
- 1/2 cup raw walnuts, roughly chopped
- 200 gr vegan oats & wholemeal cookies
- 1 cup almond milk (unsweetened)
- 1 cup raisins
- 6 soft dates
- 8-9 TBSP coconut oil
- 4-5 TBSP cocoa powder (unsweetened)
- 1 tsp cinnamon powder
- 1/4 vanilla bean extract
- Extra almond meal to coat
Steps:
- Make the Date Paste: Start by using a mortar and pestle to create a smooth paste from the dates.
- Prepare Dry Ingredients: In a medium bowl, crumble the biscuits and roughly chop half of the almonds and all the walnuts. Add the almond meal, raisins, cocoa powder, coconut oil, and cinnamon.
- Combine Date Paste with Milk: In a separate bowl, mix the date paste with milk at room temperature (avoid cold or warm milk). Add vanilla bean extract, then pour this mixture over the dry ingredients.
- Mix Carefully: Gently combine everything by hand, ensuring that the biscuits remain intact and aren’t squashed.
- Shape the Salami: Place the mixture on transparent foil and roll it carefully into a log shape. Seal the edges tightly.
- Chill: Refrigerate the log for a few hours until it’s fully hardened and ready to slice.
And that’s it. Once it was ready, I rolled it in an almond meal, sliced it and served.
