Total time: 2 hours

Ingredients:

Ingredients:

  • 5 tablespoons butter softened, divided.
  • ½ cup parmesan finely and freshly grated.
  • ⅛-¼ teaspoon garlic powder.
  • 4 pieces of sourdough bread.
  • Dijon mustard to taste.
  • 4 ounces mozzarella cheese shredded, about 1 cup.
  • 4-6 slices cheddar cheese sharp.
  • Black pepper.
  • Flaky salt.

Steps:

  1. Step 1: Preheat the pan, cut the cheese, and prepare the bread

Set your cast-iron skillet over low heat to preheat it. Recall that low heat prevents the bread from burning too rapidly and will melt the cheese more evenly.

Prepare your sourdough bread while the skillet is heating up. Cut two ½-inch-thick pieces of sourdough bread.

Using a butter knife, spread one spoonful of mayonnaise on one side of each slice to coat them equally.

If you haven't previously, shred 1 ounce (30g) of gruyere cheese and 3.5 ounces (100g) of cheddar cheese using a box grater into a bowl or chopping board.

  1. Step 2: Include the cheese and bread

To the hot cast-iron skillet, add one tablespoon of unsalted butter and stir until it melts completely.

Put one slice of bread onto the pan with the mayonnaise side facing down. On top of the bread, scatter the cheese. Although it may appear to be a big mound of cheese, it will melt very fast. It's acceptable to have some cheese in the pan since it will crisp up and become lacy there.

With the mayonnaise side facing up, place the remaining piece of bread on top of the shredded cheese.

  1. Step 3: Cook, cover, and flip

Place a cover on the pan and cook for two to three minutes on one side, or until the bottom is uniformly crispy and golden brown.

Take off the cover and turn the sandwich over with a spatula. You may add another tablespoon of butter to the pan's bottom if you think it's dry, but since the lid retains some steam, I typically don't think it's essential.

  1. Step 4: Cut and Savor!

After taking the grilled cheese out of the pan, chop it in half with a serrated knife.

Savor it right away for supper, lunch, or a snack! The grilled cheese goes well with pickles, potato chips, tomato soup, or a crisp, acidic side salad. It can also be enjoyed on its own.
