  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 8 oz pasta (penne, fettuccine, or spaghetti)
  • Salt and pepper to taste
  • Fresh parsley or green onions, for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add the onion, bell pepper, and celery. Cook, stirring occasionally, until the vegetables are tender and fragrant, about 5 minutes.
  2. Add the chicken and sausage to the pot. Cook until browned and cooked through, about 7-10 minutes.
  3. Stir in the garlic, Cajun seasoning, paprika, and cayenne pepper. Let it cook for another minute until the spices become fragrant.
  4. Add the diced tomatoes and chicken broth. Stir everything together and bring the mixture to a boil.
  5. Once boiling, add your pasta. Reduce the heat to low, cover, and cook for about 10-12 minutes, or until the pasta is al dente. Stir occasionally to prevent sticking.
  6. Once cooked, remove from heat and let it sit for 5 minutes. Taste and adjust seasonings if needed.

Serve the pastalaya in bowls and garnish with fresh parsley or green onions.

Notes

  • Adjust the heat: If you like it spicier, add more cayenne pepper or hot sauce.
