- 1 onion, chopped
- 1 bell pepper, chopped
- 2 stalks celery, chopped
- 2 chicken breasts, diced
- 2 smoked sausages, sliced
- 3 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional, for heat)
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 8 oz pasta (penne, fettuccine, or spaghetti)
- Salt and pepper to taste
- Fresh parsley or green onions, for garnish
Instructions
- Heat oil in a large pot over medium heat. Add the onion, bell pepper, and celery. Cook, stirring occasionally, until the vegetables are tender and fragrant, about 5 minutes.
- Add the chicken and sausage to the pot. Cook until browned and cooked through, about 7-10 minutes.
- Stir in the garlic, Cajun seasoning, paprika, and cayenne pepper. Let it cook for another minute until the spices become fragrant.
- Add the diced tomatoes and chicken broth. Stir everything together and bring the mixture to a boil.
- Once boiling, add your pasta. Reduce the heat to low, cover, and cook for about 10-12 minutes, or until the pasta is al dente. Stir occasionally to prevent sticking.
- Once cooked, remove from heat and let it sit for 5 minutes. Taste and adjust seasonings if needed.
Serve the pastalaya in bowls and garnish with fresh parsley or green onions.

- Adjust the heat: If you like it spicier, add more cayenne pepper or hot sauce.
- Simmer for depth: Let the ingredients simmer for a while to allow the flavors to meld together.
