For the Broth:
- 1 lb pork ribs (or chicken bones)
- 8 cups water
- 1 onion, quartered
- 4 cloves garlic, minced
- 1 tbsp fish sauce
- 1 tsp turmeric powder
- 1 tsp sugar
- ½ tsp black pepper
- 1 tsp salt
For the Protein:
- ½ lb shrimp, peeled and deveined
- ½ lb pork belly, thinly sliced
- 1 tbsp fish sauce
- 1 tsp turmeric powder
- ½ tsp black pepper
For the Noodles & Garnish:
- 1 pack Mi Quang rice noodles (e.g., 3 Mien Mi Quang Dragon Noodles 340g)
- ½ cup roasted peanuts, crushed
- 1 lime, cut into wedges
- 1 cup bean sprouts
- ½ cup Thai basil
- ½ cup cilantro
- 1 crispy rice cracker, broken into pieces
- 1 red chili, sliced (optional)
Instructions
- Prepare the Broth: Simmer pork ribs (or chicken bones), onion, and garlic in 8 cups of water for 1 hour. Strain and season with fish sauce, turmeric, sugar, pepper, and salt.
- Cook the Protein: Stir-fry pork belly with fish sauce, turmeric, and pepper until golden. Add shrimp and cook until pink.
- Prepare the Noodles: Cook Mi Quang noodles per package instructions, then rinse under cold water.
- Assemble: Divide noodles into bowls, top with pork, shrimp, broth, and garnishes like roasted peanuts, herbs, and crispy rice crackers. Serve with lime wedges and chili.
Notes
- For a vegetarian version, substitute pork and shrimp with tofu and mushrooms.
- Adjust the spice level by adding more or less chili.
