  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame seeds (optional)
  • Green onions for garnish

Instructions

  1. Prepare the Marinade: In a bowl, mix together the soy sauce, hoisin sauce, rice vinegar, honey, garlic, and ginger. Add the chicken thighs and coat them well with the marinade. Let them marinate for at least 20 minutes.
  2. Sear the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinated chicken thighs, skin-side down, and sear until golden brown, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
  3. Cook the Vegetables: In the same skillet, add the red bell pepper and onion. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  4. Make the Sauce: In a small bowl, whisk together the chicken broth and cornstarch until smooth. Pour this mixture into the skillet, stirring continuously until the sauce thickens.
  5. Combine and Simmer: Return the seared chicken thighs to the skillet. Simmer for another 15-20 minutes, or until the chicken is cooked through and the sauce has reduced to a glossy coating.
  6. Serve: Garnish with sesame seeds and green onions. Serve hot with steamed rice or noodles.

Notes

  • For an extra kick, add a teaspoon of chili flakes (or Sonic Sauce) to the marinade.
