  • Half apple, julienned

For the avocado pesto

  • 1 avocado, peeled and pitted
  • 1/3 cup almonds
  • 1/3 cup cashews
  • Juice of 1/2 lemon (medium-sized)
  • 1 small garlic clove, grated
  • Pinch of salt
  • 1 TBSP olive oil
  • 1 tsp balsamic vinegar

For serving

  • Chili flakes
  • Sesame seeds

Instructions

  1. Slice the zucchini: sprinkle it with a bit of salt, and leave it to soften in a colander. Meanwhile, prepare the rest of the veggies and the avocado pesto.
  2. Mix all the ingredients: put avocado pesto in a blender for a few seconds until they transform into a creamy, chunky mixture. Alternatively, the nuts can be crushed using a mortar and pestle and then they can be mixed with the rest of the ingredients using a fork.
  3. For the final assembly: rinse the zucchini to get rid of the extra salt, and absorb the water with paper towels. To make a roll, take one zucchini slice, add a spoon of avocado pesto, and make sure to spread it at both ends. Add veggies (2-3 slices of each) and roll. When all 8 are done, sprinkle them with chili flakes and sesame seeds.
