Ingredients

Scale
  • 2 large potatoes, peeled and cut into fries
  • 4 Colombian-style sausages (such as salchichón or hot dogs), sliced
  • Vegetable oil (for frying)
  • Salt, to taste
  • Ketchup, for serving
  • Mayonnaise, for serving
  • Aji (optional), for serving
  • Fresh cilantro, chopped (for garnish)

Instructions

  • Prepare the Potatoes: Soak the cut fries in cold water for about 10 minutes to remove excess starch. This helps achieve extra crispiness. Drain and pat dry.
  • Fry the Potatoes: Heat vegetable oil in a deep skillet or fryer over medium-high heat. Once hot, carefully add the fries in batches. Fry until golden brown and crispy, about 5-7 minutes. Remove and place on paper towels to drain excess oil. Season with salt.
  • Cook the Sausages: In the same oil, add the sliced sausages and fry until they are golden and slightly crispy, about 3-4 minutes. Remove and drain on paper towels.
  • Assemble the Dish: On a serving platter, arrange a generous layer of crispy fries. Top with the fried sausage slices. Drizzle with ketchup and mayonnaise. If desired, add aji for a spicy kick.
  • Garnish and Serve: Finish with a sprinkle of fresh cilantro for a burst of flavor. Serve immediately while hot.

Notes

  • For extra crispy fries, use starchy potatoes like Russets and soak in cold water before frying.
  • Alternative Cooking Method: For a lighter version, bake the fries at 425°F for about 20 minutes, flipping halfway.
  • Customize Your Toppings: Try adding melted cheese, chopped onions, or pickled jalapeños for extra flavor.
