- 1 1/2 cups warm water
- 1 Tbsp sugar
- 2 tsp kosher salt
- 1 package active dry yeast
- 4 1/2 cups all-purpose flour
- 4 Tbsp unsalted butter melted
- 2/3 cup baking soda
- 1 Tbsp egg yolk beaten with 1 water
- Sea salt
- 3 Tbsp salted butter, melted
- 1/2 tsp garlic powder
- Pinch of minced fresh parsley
Instructions
- In a stand mixer bowl, combine the water, sugar, and salt; then, sprinkle the yeast on top. Allow it to sit for 5 minutes, or until it foams slightly and smells “yeasty”.
- Add the flour and melted butter, then use the dough hook attachment to mix on low until fully incorporated. Knead for about 4 minutes on medium speed, until the dough is smooth, elastic, and pulls away from the bowl’s sides.
- Place the dough in an oiled basin, cover with plastic wrap, and let it rise for an hour.
- Bring a large stock pot filled with water and baking soda to a boil.
- Preheat your oven to 450 degrees. Line two baking sheets with parchment paper and gently coat with cooking spray.
- Spray a cutting board or your counter with cooking spray, then form the dough into a ball. Cut the dough in half, then into eight pieces (for a total of sixteen). Roll each piece into a 10- to 12-inch rope.
- Set aside. Beat the egg yolk with a tablespoon of water.
- Boil each stick individually for 30 seconds. Remove them from the water using a colander or big spatula. Place on prepared baking sheets, brush with egg wash, and season with sea salt. Bake for about 14 minutes, or until a dark golden brown hue develops. Let it cool for 5 minutes before serving.
- If desired, mix the garlic butter ingredients and brush on heated pretzels.
Notes
- Dough consistency: Make sure the dough is firm but somewhat sticky to handle. If the mixture is too sticky, gradually add additional flour.
- Do not skip the baking soda bath. It is vital for the traditional pretzel flavor, texture, and dark brown color. However, avoid overboiling the sticks, since this might result in an extremely harsh flavor.
