Steps:

  1. Prepare the dough: In a large bowl, combine the whole wheat flour and salt. Add the solid coconut oil and mix until the mixture resembles coarse crumbs. Stir in the maple syrup, almond milk, and vanilla extract until a dough forms.
  2. Roll out the dough: On a lightly floured surface, roll out the dough to about 1/8 inch thick. Cut the dough into rectangles (about 3×4 inches).
  3. Add the filling: Place a small spoonful of strawberry jam in the center of half of the rectangles. Spread it out, leaving a small border around the edges. Place the remaining rectangles on top and press the edges with a fork to seal.
  4. Bake the Pop Tarts: Preheat your oven to 350°F (175°C). Place the Pop Tarts on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
