My vegan version of TGI Fridays potato skins turned out to be a delightful surprise! Using nutritional yeast for that cheesy flavor and loading them up with colorful veggies, I created a healthier twist that still captured the essence of those cherished memories.

  • 4 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 4 strips bacon, cooked and crumbled
  • 1/2 cup sour cream
  • 2 green onions, sliced
  • 1/4 cup chopped fresh parsley (optional)

Steps:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  1. Prepare the Potatoes: Scrub the potatoes clean and pat them dry. Rub each potato with olive oil and sprinkle with salt. Place them on a baking sheet and bake for 45-50 minutes, or until the potatoes are tender and the skins are crispy.
  1. Scoop Out the Potatoes: Once the potatoes are cool enough to handle, cut them in half lengthwise. Scoop out most of the flesh, leaving a thin layer to keep the skins sturdy.
  1. Season the Skins: Brush the inside of the potato skins with olive oil and sprinkle with salt and pepper. Place them back on the baking sheet, skin-side down, and bake for an additional 10 minutes until they are crispy.
  1. Add the Toppings: Remove the skins from the oven and fill each one with shredded cheddar cheese and crumbled bacon. Return to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
  1. Serve the Potato Skins: Top each potato skin with a dollop of sour cream and a sprinkle of green onions and parsley. Serve hot and enjoy!
