Zucchini carrot salad with Thai dressing. Giveaway continues

Nothing fancy or in-depth today, just salad! And a giveaway.

zucchini carrot salad with thai dressingEvery time I throw together some fresh veggies with a simple dressing I end up with something gorgeous on my plate bowl and I call myself a Chef (ha!). Why is salad so perfect? Really. Fresh, vibrant, living colors. Put it all in a pretty red bowl and I can stare at take photos of it for hours…until it begs me to eat it.

This salad has raw zucchini, carrot, a mushroom, celery, green onion and is topped with almonds, sesame seeds and fresh basil. The dressing is slightly sweet, spicy, nutty and zesty. Just the way I like it. Nom nom.

1 TBSP almond meal
1 tsp linseed
1 TBSP coconut meat
1 TBSP honey
1/4 tsp cayenne pepper 
1/4 tsp ginger powder
1/4 tsp garlic powder 
2-3 TBSP lemon juice 
1 TBSP soy sauce
2-3 TBSP water
1 tsp sesame oil

I just whisked them all together in a bowl until completely mixed.

For 1 serving of salad I used:

1/2 zucchini, thinly sliced with peeler
1/2 carrot, thinly sliced with peeler
1 mushroom, thinly sliced
1 green onion, thinly sliced
1 celery stick, chopped

I mixed the veggies with the dressing, gently. Then topped it all with:

a handful of fresh basil
1/4 cup crushed almonds 
1 TBSP sesame seeds

It’s so YUM you’ll be scraping the bottom of the bowl hoping that there’s more where that came from!
