For this lovely and delicious light meal (or snack) you need about 40 minutes, an oven and a food processor.
The bread does not use any rising factors. For about 4 small round breads all you need is just 500 gr of wholemeal spelt flour, with about 250 ml of water, 2 tbsp of cold pressed olive oil and a pinch of sea salt. Roll thoroughly until the dough becomes soft and sticky. For a bit of an extra ‘healthiness kick’, add 1/4 cup of sesame seeds and 1/8 cup of poppy seeds.
Bake in the oven for 15-20 minutes at 150 degrees.
In the meantime, wash the mushrooms very good, chop them and mix them with the sauce.
For the sauce you need:
- 1/4 cup ground cashews (not roasted and not salted)
- 1 tsp miso
- half a bunch of chopped parsley
- bit of onion and garlic very finely chopped
- olive oil
- 2 tbsp lemon juice
- pinch of salt
Add all these ingredients in a food processor until the mixture is thoroughly blended. Add on top of the mushrooms and mix.
Serve with fresh parsley.
