Ingredients

For the dough:

  • 200 g / 7.1 oz. / 1 ½ cups raw almonds
  • 200 g / 7.1 oz. / 1 ½ cups raw walnuts
  • 200 g / 7.1 oz. / 1 cup of dates, pitted
  • 65 g / 2.3 oz. / ⅔ cups raw cacao powder
  • 2 tablespoons nibs of cacao butter, melted
  • a pinch of sea salt

For the filling:

  • 65 g / 2.3 oz. / ⅓ cup dates, pitted
  • 2-3 tablespoons raw honey
  • 1 avocado, very ripe, peeled and pitted
  • 35 g / 1.2 oz. / ⅓ cup raw cacao powder
  • 1 tablespoon coconut oil

For the topping:

  • a handful of fresh strawberries
  • ½ teaspoon vanilla extract
  • a handful of fresh raspberries

How To Make Healthier Strawberry Walnut Chocolate Cake Step By Step

1. Add the almonds, walnuts, dates, cacao powder, melted cacao butter, and a pinch of salt to a food processor, and blend until crumbled but not too finely.

2. Take your preferred cake shape pan, place some wrapping foil on the bottom of the pan, then tightly pack half of the dough in it and try to make a uniform layer.

3. Place another layer of wrapping foil on top and tightly pack the remaining dough. Cover it with the wrapping foil and place the cake layers in the fridge.

4. To make the filling, add the dates, honey, avocado, cacao powder, and coconut oil to a blender and pulse until you get a smooth chocolate mousse. Scrap the sides when needed.

5. Put the mousse in a bowl and place it in the fridge.

6. Place the strawberries and the vanilla extract in the blender and pulse until you get a creamy sauce. Pour the sauce into a bowl and place it in the fridge.

7. To assemble the cake, take the dough out of the fridge and remove the top layer with the wrapping foil.

8. Carefully place the first layer on a serving plate, then cover it with half of the chocolate mousse and sprinkle some raspberries on top.

9. Carefully place the second cake layer on top of the filling. Press gently to seal the two cake layers, but be careful not to squash the raspberries too much. Then, add the remaining chocolate mousse on top. Place the cake in the fridge until you’re ready to serve it.

10. Serve with fresh strawberry sauce and fresh raspberries on top.

Note

  • One of the keys to making a great cake is to allow the flavors to come together. I recommend letting the cake cool in the fridge for at least an hour before serving. This will give the different flavors time to blend together, resulting in a richer and more complex taste.
