Ooey gooey luscious cheesecake. Nom nom nom.
This dessert is so rich, creamy and zesty. It’s pure pleasure with every mouthful. Take my word for it. Or make it! It’s super easy to put together – you simply need to blend few things, place in the freezer for a bit, then fridge and after dinner…indulge away! We made it few days ago, because that is when we had the idea and that’s when we felt like having a treat, but my guess is that it’s absolutely perfect for a special Valentine.

Now, enough about the cheesecake, because (really now) it speaks for itself better than I can. Let’s focus on the very first giveaway we are having. Like…Now. For sure we were not planning on anything of the sort, since this blog was set up for the mere pleasure of sharing some food love and interacting with lovely people. But the other day, in addition to the heat, something else struck me (the woman of the two people behind this blog). I am privileged and I am lucky. I am free to live my life as I choose, free to make my decisions. I enjoy equal rights to those of my partner, equal professional opportunities and I have never been discriminated against. I am cherished as a daughter, sister, friend and partner. I am free to choose the person I want to share my life with (lucky for B). And for all these, I am grateful.
I am also aware that the equal rights I am enjoying did not just happen. I am aware that it hasn’t always been the case and that many women have fought throughout the years for each and every one of them. And in some parts of the world, they are still fighting for equal rights, equal opportunities, to be heard and to be able to make their own decisions.
Today, I cook because I can, because I want to and (most importantly) because I like it. Not because I have to and for sure not because a woman ‘belongs in the kitchen’. Today, I say, let’s not take this for granted. Let’s raise awareness and celebrate the efforts of all the women before us who have made it possible!
To me, the biggest gift of all is the gift of giving. Which brings me to our little giveaway. I made something special for all the women who enjoy their equal rights or are fighting for them, for the women who love to cook and who spend time in the kitchen because they want to and because they’re passionate about it, for all the women who go to the markets because they enjoy it. I made you a very special bag, half from upcycled materials, which should be perfect for anything you’d like to use it for. To carry your blueberry muffins, your spinach pie, fresh fruits and veggies that you just bought from the market. Anything you can think of.
As I just mentioned, half of this cute handmade bag (the outside) is made from upcycled materials. The handles come from the belt of a dress, the stripe fabric from a small curtain and the bottom jeans part from a jacket. The interior is made from organic cotton. I hope you like it and I hope you want it. 🙂

1/2 cup almond meal 1 TBSP date paste
Date paste is simply dates and a bit of water, pulsed in a blender until creamy, caramel-like texture. Just mix the two ingredients by hand and press firmly in the cake shape.
For the cheesecake filling we used:
1 cup cashews 1/4 cup coconut meat 1/5 cup water 1 TBSP honey 4-5 TBSP lemon juice
Pulse all these in the blender until they transform into a creamy smooth mixture. Scoop it onto the crust.
For the cranberry layer we used:
1/2 cup dry cranberries 1/8 cup water 1 TBSP lemon 1 TBSP honey 1 TBSP coconut oil
Pulse these in the blender until the are completely incorporated and scoop on top of the coconut filling. Cover the cheesecake and place it in the freezer for about 20 minutes, then move it to the fridge. In about 30-40 minutes it should be ready.
Today’s take away: Make a difference. Make everyday Women’s Day. Think (globally) of all that still needs to be done for women all over the world and act locally – raise awareness, get involved, donate to support women’s rights. Do your bit to ensure all little girls around the world will enjoy a bright and equal future.
