Isn’t it wonderful when sudden moments of inspiration in the kitchen turn into mouthfuls of delicious, gooey, chocolaty goodness? Yesterday, after dinner, both me and B. got struck by a craving for something sweet. Doesn’t happen often to really crave for sweets, and even less in the evenings, after dinner. We both tend to indulge either early in the day or in the afternoon, as a post workout snack. He bikes, I run. No, not with him, nor after him. That would be too hilarious and quite an endeavor.
To feed our cravings, I took out the raw nutella I made the other day, scooped a bit in a bowl, sprinkled some coconut on top and served with a Medjool date or two. Or so I was planning. But as I looked at the tiny bowl, I felt an urge to get my fingers in the dessert and mix everything together. And so I did. And so I created magic! With just 3 ingredients.
If you’ve made the nutella already, these macaroons will only take 2-3 minutes to put together. But even if you haven’t made it, we’re talking about 10 extra minutes. Piece of
cake macaroon. If you’re not into hazelnuts (but, why wouldn’t you be?!) you can make the nutella with cashews or almonds or any other nut you like. I reckon it would be as good.
- 5 TBSP raw nutella (recipe link below)
- 5 big, pitted, soft dates (Medjool are ideal)
- 1 cup coconut shreds
- Add everything to a bowl and mix by hand.
- Serve right away or refrigerate.
