Chocolate salami makeover

For all of us chocolate lovers out there.

What’s not to love about a bit & fat chocolate log with nuts and dry fruits? Well, the butter, eggs, animal milk and refined sugar it contains. Yes, we agree, chocolate salami is one of the tastiest and most simple chocolaty desserts one could make, but the ingredients it traditionally contains are not what we like in our sweets. Mind you, we do have some animal milk few times a year, we do like some butter every now and then with our breakfast or to cook with, and for sure we have eggs for breakfast every couple of weeks or so. But all these ingredients in sweets…not if I can help it πŸ˜‰

Needn’t say more. I’ve tried and (in our opinion, with few substitutions here and there) I’ve successfully revamped the ol’ chocolate salami, bringing it to a whole new healthiness level, without messing with its deliciousness.

To make 2 small and chubby chocolate salami logs we used:

1/2 cup raw almonds, roughly chopped
1/2 cup almond meal 
1/2 cup raw walnuts, roughly chopped
200 gr vegan oats & wholemeal cookies
1 cup almond milk (unsweetened)
1 cup raisins
6 soft dates 
8-9 TBSP coconut oil
4-5 TBSP cocoa powder (unsweetened)
1 tsp cinnamon powder
1/4 vanilla bean extract 
extra almond meal to coat

We first made a paste using the dates and a mortar and pestle. Then, in a medium sized bowl, we crumbled the biscuits, roughly chopped half the almonds and the walnuts. We added to the same bowl the almond meal, raisins, cocoa powder, coconut oil and cinnamon. Separately, we mixed the date paste with the milk (at room temperature – not cold, not warm), added vanilla bean extract and then poured everything on top of the biscuit mix. We gently mixed everything by hand, careful not to squash/soften the biscuits. Once everything is mixed and coated with everything else, we placed the mixture on transparent foil and gently rolled it into a log. We sealed the edges and placed in the fridge for couple of hours, until completely hardened.

And that’s it. Once it was ready, we rolled it in almond meal, sliced it and served.
