Black sesame ice cream with fresh mandarin slices

black sesame ice creamI must be out of my mind(s). I’m having ice cold desserts in winter! Brrrr…am getting cold just writing about it. But what can I do when my creative genius decides to wholeheartedly disregard the weather outside?! Dost thou not follow thy imagination?

black sesame ice creamblack sesame ice creamThis is one of those weird desserts which don’t look anything like they taste. The sharp, cold, grey color of this ice cream is in such contrast with it’s texture and taste. It’s very smooth, creamy and rich, sweet and nutty in taste. I find it pairs very well with slices of fresh mandarins, which tickle the taste buds and cut through the creaminess of the ice cream.

black sesame ice creamNow it’s a good moment to tell you I do not have an ice cream maker and that I made this soft serve with my beloved blender. Always saves me when in need!

  • 400 ml coconut milk (fresh or 1 can store bought)
  • 1/2 cup black sesame seeds (about 50 gr)
  • 1 banana
  • 1 TBSP sweetener of choice (raw honey / maple syrup)
  • 1/4 tsp cinnamon
  • To serve: slices of fresh mandarin
  1. Add sesame seeds to blender and whiz them up until they turn to a fine flour consistency.
  2. Add the rest of the ingredients and blitz until you get a creamy, smooth mix.
  3. Pour mix into an airtight container and pop it into the freezer. Leave it overnight or until frozen.
If you leave it overnight, when you take it out of the freezer allow it to thaw for a couple of minutes, then roughly cut it into large chunks and add it to the blender again. Process for few seconds until you get soft serve ice cream.
