I’m kickstarting a relaxing long weekend with an awesome two colored smoothie because I take my bubbles first thing in the morning.

There’s a public holiday happening this Monday in this corner of the world, which means that for the next couple of days I look forward to not doing much, catching up on some overdue zzzzs, maybe visiting ze beach, working on the book and on overdue business development plans. Did I say I’m not up to much? I’ll take that back, I’ll be doing HEAPS. But in all fairness the word ‘working’ is not an accurate description of the fun I’m having working on the things I love. Cooking and shooting colorful, plant based recipes for my upcoming cookbook is so much fun and always ends up in a feast. Plus the joy I’m feeling only at the thought that each recipe brings me closer to nailing this cookbook….priceless! I am seriously overfilled with anticipation about it! Cannot wait to have a draft in front of me. Cannot wait to hold onto the manuscript for the very first time. Cannot wait to see what YOU think of it. Spring 2016. Write that down! Too. Much. Excitement.

Now, this smoothie. You must make. I used nut milk kefir in the recipe which gives it a great subtle sour flavor that balances the sweetness in a delicious way, but if you haven’t jumped on that bandwagon (do you want to? do you need a quick recipe?), you can use any nut milk you want or coconut milk. It will taste amazing!

Bubbles. That’s what’s up.

Ouch! 🙁 I know you want to make this and that recipe and you’re excited and I am so so HAPPY you are and I want you to try all my recipes if you have time. Know I’m not doing it on purpose nor am I ignoring your comments because I want to. Over the top priobiotic oat smoothie

Makes 1

Ingredients for green layer

  • 1/2 cup vegan milk kefir
  • juice of 1/2 medium sized lemon
  • 1 frozen banana (precut into chuncks)
  • handful of pineapple cubes
  • 1 tsp each: spirulina and matcha

Ingredients for red layer

  • 1/2 cup vegan milk kefir
  • juice of 1/2 medium sized lemon
  • a handful of mixed organic frozen berries
  • 1 tsp maca powder (optional, but yum if you have it)
  • 1/2 cup coconut water (or more nut milk)
  • 1/2 cup wholegrain oats

Middle layer

  • 1/2 cup wholegrain oats to add in between smoothie layers if you want the smoothie to be more filling or if you just want it to look extra fancy .

Toppings

  • I’m into smoothie toppings lately because they make the experience of smoothie sipping simply too much fun! For this smoothie I used 1 TBSP of organic peanut butter, some banana chips I made previously and extra frozen berries.

Steps

  1. Add the ingredients for the green layer to a blender and blitz until super smooth.
  2. Pour into a jar, then carefully add the oats on top, making sure they are evenly distributed and create a thick(ish) layer on top of the green smoothie blend.
  3. Add the ingredients for the red layer in the blender (no need to wash in between) and blitz until super smooth. Gently pour on top of the oats layer.
  4. Add your favorite toppings and enjoy in the sunshine. It’s a true fact that sunshine makes smoothies taste way better!
