I hope you all had the bestest of holidays and are ready to smash 2017! As I mentioned on insta the other day, I’m not a fan of resolutions. I believe we should make goals/changes/self improvements on any day, every day, when it feels the right moment for it. I think that’s a more sustainable approach that can lead to long term results. So that can be February 8 or March 16, or June 22 or September 4. Anything you want to do, or achieve, go for it. Don’t put a pin in it, don’t postpone until tomorrow or the next January 1st. I hope this year is the year when YOU can make all your dreams come true.

Personally, I’m very excited about 2017 and all the things that are coming to fruition. At my end, this year looks like it is going to KICK ASS! And I couldn’t be happier about it. In 2016 I have worked my but off (think 15 hours work days more than once or twice) trying to achieve my dream goals, transforming my passion into a successful business. It’s been hard and I lost focus and confidence more than once, but I am lucky to have an amazing, hard working team, incredible family and friends which basically translates into heaps of support. And support is crucial when you’re running your own business, for keeping grounded and balanced and, you know, to prevent one from curling under a blanket and calling it quits. 🙂

I thought long and hard about the first recipe to hit the blog in the new year. And it feels right that it is a green smoothie as these are my bread and butter. Green smoothies (or sometimes brown, because green leaves + berries can oftentimes lead to really ‘beautiful’ brown results 🙂 are a great way to get a lot of fruits and veggies (and thus nutrients!) in your belly, in their whole form. Green smoothies are also an excellent first step if you are looking to make changes to your diet, to add more fruits and veg. They are easy to digest, very quick to make and perfect for the busy lifestyles of 99% of the population – they are perfect travel companions!

This smoothie is made with ALL my favorite ingredients and is my go to power smoothie. It has greens, it has citrus, it has apple, it has my favorite mint+ginger combo, it has filling ingredients such as oats, quinoa and chia seeds aaaand my definite favorite – spirulina! The iron powerhouse.

Mint, ginger and citrus green smoothie

Prep time: 2 minutes
Serves: 1

Ingredients

  • 1 cup water
  • 1 frozen banana, chopped
  • 1 apple, chopped
  • 1 mandarin or orange, pitted
  • 3 lemon slices
  • 1 slice of ginger
  • small handful of mint
  • 3 small kale leaves
  • 1/2 cup rolled oats
  • 1/3 cups coconut flakes/shreds
  • 1 TBSP chia seeds
  • 1 tsp spirulina
  • middle layer: 1/2 cup puffed quinoa or buckwheat + 1/3 cup coconut shreds/flakes
  • toppings of choice (I used coconut and frozen blueberries)

Instructions

  1. Add everything to a blender and process until it becomes very smooth.
  2. Pour half in a jar, add the puffed quinoa and coconut flakes/shreds, then pour the remaining half.
  3. Add toppings and enjoy fresh!
