pear mille feuille with walnut butterThis was my breakfast yesterday. Seriously. And yes, it was gorgeous, delicious, creamy, juicy and everything you’d expect by looking at the photos. And no, not complicated at all to put together. Actually, just under 10 minutes even if you make everything from scratch.

pear mille feuille with walnut butterI have been impatiently waiting to share it with you for three reasons. One, walnut butter is my latest obsession; it’s the bestest nut butter on the planet (!) and if you haven’t tried it yet, please do. You’ll be in creamy, nutty heaven. Second, walnut butter with honey is pure sweet magic and you deserve that in the morning. Last but not least, pears and walnuts are another match made in heaven. And on top of everything, pears and walnuts and honey all at the same time will make your tummy immensely happy.

pear mille feuille with walnut butterWhy you should include walnuts in your diet (if you’re not addicted to them already):

  • they’re a rich source of fiber,
  • a rich source of antioxidants; more & better antioxidants than a variety of other nuts*,
  • a rich source of unsaturated fatty acids, particularly alpha-linolenic acid , which is an omega-3 fatty acid,**
  • and a good source of vitamin E.***

What does all that mean? In translation:

  • Walnuts help promote heart health by lowering bad blood cholesterol levels, improving blood flow and cooling inflammation linked to heart disease.**
  • Walnuts can help manage and reduce stress by affecting the body’s blood pressure response to stress.****
  • Walnuts help us maintain a healthy brain for the rest of our lives; increased levels of vitamin E have been linked to less cognitive decline as we get older.***

  • To make walnut butter:
  • 2 cups raw walnuts
  • 2 TBSP coconut oil
  • pinch of vanilla seeds
  • To make pear mille feuille:
  • fresh pear
  • walnut butter
  • sweeter of choice (my fav is raw organic honey)
  • toppings of choice: pepitas, chia seeds, sesame seeds, currants (oil free, sweetener free), bee pollen
  1. Add the ingredients for the walnut butter to your blender and blitz until you get a soft, creamy butter. The best butter.
  2. Cut your pear in thin slices (I used a mandoline slicer – takes only seconds).
  3. Layer everything up – every 2-3 pear slices add some walnut butter, honey (or whatever sweetener you are using) and toppings of choice; add 2-3 more pear slices with walnut butter, honey and toppings; then 2-3 more pear slices ….and you got the picture, all the way to the top.
  4. Serve immediately.
This recipe will yield more walnut butter than required for the pear mille feuille. You can easily make more than 1 serve or keep the walnut butter in an airtight jar for future use.
