This is my new favorite thing! Ok ok, I know, I have many new favorite things. But in all honesty, this must be the discovery of the year. When I initially had the idea to turn an avocado into yet another cute ‘n delicious snack and dedicate it to my brother (avocados are his passion, too!), I was not expecting it to turn into such a breakfast treat! What’s more (yes, there’s more), I was not expecting it to be such a great alternative to soft cheese. Not that I don’t like cheese. I looove cheese. I would eat cheese with everything, all the time! Soft, hard, blue, white, purple or orange, I do love a good (organic) cheese! But cheese…not so good for a healthy heart. Yup, all that fat which makes it so delicious it’s good now and then, but one should really not have it all that often. Avocado on the other hand is full of heart healthy monounsaturated
These flavorsome bites (the entire feast, actually) are full of nuts (almonds, walnuts) and seeds (sesame, linseed) which are also rich in mono- and poly-unsaturated fats and essential fatty acids (Omega 3 and Omega 6) good for protecting against heart disease (they lower the bad cholesterol, reduce inflammation and regulate blood clotting), good for brain development and the nervous system. So there you go!
1 ripe avocado 5-6 TBSP almond meal 3 TBSP walnuts (crushed) 5-6 sundry tomatoes, finely chopped 1 TBSP flax meal (linseed, ground) 2-3 TBSP lemon pinch of sea salt (optional) freshly ground pepper sesame seeds, for coating
I simply mixed everything together (except for the sesame seeds) in a bowl, using a fork. Then I made tiny balls which I rolled in sesame seeds, covered and placed in the fridge for 15-20 minutes to firm up a bit. Then I nibbled on each and every one of them! YUM!
