coconut pudding with chia and vanillaI absolutely love it when a simple out-of-the-blue idea turns out to be something amazing. Where does inspiration come from anyway? This time it wasn’t something I tasted and it wasn’t something I saw. It was maybe a subconscious craving? Must have been because it turned out I did not need anything else for dinner yesterday, but a big serving of this silky, airy, creamy pudding. It was pure perfection at the end of a hot, busy day.

coconut pudding with chia vanilla and cherriesCherries work wonders in this recipe, but if they’re not in season at your end of the world, try substituting with some berries (even frozen would do), peaches, nectarines or apricots, mango or ripe pears.

What I can tell you though is that it’s a healthy makeover of a delicious classic dessert and IT WILL MAKE YOUR KNEES GO WEAK! You can venture a guess if you’d like. 🙂

Coconut pudding with chia, vanilla and cherries {raw & vegan}

Serves: 1-2
  • The meat and water of one young coconut
  • 1 banana
  • 10 TBSP lemon juice
  • 2 TBSP of liquid sweetener of choice
  • 2 TBSP chia seeds
  • 1 TBSP coconut oil
  • handful of fresh cherries, pitted
  • handful of fresh black mulberries
  • 1/2 cup water
  • 1 tsp agar agar
  • To top: pinch of vanilla seeds and cacao nibs
  1. Add coconut water, coconut meat, banana, lemon juice, sweetener and coconut oil to a blender and blitz until you get a silky smooth thin cream.
  2. Pour coconut cream into a bowl.
  3. Add chia seeds and stirr to mix them through.
  4. Have your cherries and mulberries prepared and pitted.
  5. Add the water to a small pot and bring it to a boil. On low heat, add agar agar and slowly stir with a whisk for about 2 mins. You will notice it will begin to thicken. Stir for another minute.
  6. Take the water off heat and allow it to slightly chill until it reaches body temp, more or less, all the while continue to stir it with a whisk. This should not take long (about 2 mins).
  7. Add the water with agar agar to the coconut mix and quickly stir few times with the whisk.
  8. Quickly add the fruits (make sure they sink into the pudding) and place the bowl in the fridge.
  9. Serve chilled, with a sprinkle of vanilla seeds, more fruits and cacao nibs.
