Quinoa almond and mint salad plus awesome cook book giveaway

quinoa almond and mint saladI’ve had my nose deeply buried in an awesome cook book the past couple of weeks.If you never thought you can actually read a cook book cover to cover, well you can. You so can. Not only can you drool over the pages, browse the recipes, but you can actually live, breathe, smell and taste the little snippets of texts accompanying them.

As was to be expected (really it was to be expected!), this second book is as gorgeous as the first one. As gorgeous as their app. And as gorgeous as their blog.

It is full of stunning photography, innovative and inspiring recipes and wonderful flavors from around the world. French breakfasts, British tea treats, Moroccan influences galore, northern European comforts, Spanish and Italian feasts, South American delights, Vietnamese freshness – seriously you guys, you have the entire world’s flavors at your finger tips, all made healthy and easy. I’ve already made a couple of drinks, a smoothie, salads, chia pudding and there’s many more to come. I’m pretty much set to conquer it all.

quinoa almond and mint saladAnd because I love the book dearly, I decided to share a recipe with you, from all that I’ve tried so far. And the winning ticket goes to …. quinoa! Everysingletime. I cannot get enough of this gorgeous-full-of-complete-protein grain. When I made this salad, I inhaled it in nanoseconds. And much to my surprise, husband devoured everything on his plate as well, despite the lack of meaty ingredients. This salad has it all. It bursts with sweet, caramelized, salty and zesty Moroccan flavors and the most wonderful fresh herbs. It’s made of soft, juicy, crunchy and irresistible textures. And you can make heaps of it if you want to feed an army, with equal amounts of effort.

Prep time:  10 mins
Cooking time:  approx. 25 mins

Serves 4


  • 1 zucchini
  • 1 eggplant
  • olive oil
  • 1 garlic clove, grated
  • sea salt
  • 300 g quinoa (I used a mix of white and black organic quinoa)
  • 750 ml water (that’s about 3 cups)
  • 1 tsp cinnamon
  • juice of half a lemon
  • handful of fresh mint (I used Moroccan mint), roughly chopped
  • handful of fresh coriander, roughly chopped
  • 2 avocados, pitted and diced
  • 3 TBSP raisins (oil free, sugar free)
  • seeds of half a pomegranate
  • 100 g almonds (toasted or raw, I skipped adding salt to them as I need to mind my salt intake and there’s already sea salt in the salad)


  1. Preheat the oven to 200C. Slice the zucchini and eggplant in medium thin slices, brush them with olive oil on both sides and place them on the grill rack. Roast them until soft and slightly burnt on the edges about 15 to 20 minutes – but keep an eye on them as they burn (for real) easily.
  2. When ready, place the zucchini and eggplant slices in a bowl, add olive oil, sea salt and the grated garlic and toss gently. Cover and set aside.
  3. While veggies are roasting, rinse the quinoa and add it to the 3 cups of water, with the cinnamon. Bring it to a boil and then cover and simmer for about 15-20 minutes, until all the water is absorbed. Turn off heat and fluff up the quinoa with a fork, as you would cous cous.
  4. Add the quinoa to the roasted veggies, add the rest of the ingredients, lemon juice and extra olive oil if needed. Toss to cover everything in everything and enjoy warm.
  5. To serve, you can top with extra almonds, extra fresh herbs and pomegranate seeds.
